Well...Liam has finally gotten his first skateboard. He is having so much fun with it and was proud to show off his first injury! We've got the the knees, elbows and head covered...the rest is up to him. He will be taking lessons in July but until then I will just cross my fingers and hope for the best! :) The adventures of raising a fearless child never end.
Lydia, on the other hand, has started an adventure of her own....SOLID FOOD! This past Sunday, after constantly trying to keep her little chubby hands away from our food, we decided it was time for cereal. You would have thought we had given her pure heaven on a spoon....who knew some mushy cereal could make someone sooo happy! Can't wait to bring on the good stuff!

So, I had purchased these little phyllo shells a few weeks ago and I had been itching to make something with them. Finally, I decided to give Chocolate Mousse recipe from The Joy of Vegan Baking a go. Once I filled the shells with the mousse, I chilled in the fridge for just over an hour. Once I was ready to serve them I topped with blackberries and raspberries. They were so light and delicious...I could have easily eaten the whole plate! The shells came 15 in a box but the recipe could have easily filled two boxes...perhaps more. These would be great to serve at parties.
