So I tried yet another Dreena recipe tonight....this time I made the Blackened Tofu also from Eat, Drink and Be Vegan. It had a really great taste and was super easy to make. I served it along side a mixed baby greens salad with "honey" mustard dressing and homemade onion rings! Nummy!
I also tried a new cupcake recipe...this recipe is from The Joy of Vegan Baking. Chocolate Cream Cheese Cupcakes....very moist cupcakes which you fill with a decadent cream cheese icing. The icing came out a bit too liquidy so I will need to tweak the recipe next time...but they tasted amazing.
Patrick (the hubby) thinks I'm wacko for taking so many food pictures....but I just love to show off my vegan goodies! :)

Soooooooo.....I finally got around to making Dreena's raw vegan ceasar dressing and polenta croutons from Eat, Drink and Be Vegan. They were soooooo good. I put them on a bed of romaine with some sliced avocados, tomatoes and vegan chikn strips to make a complete meal. FABULOUS!
