Heat wave and dieting keeping me out of the kitchen!

Damn it's been hot...I mean incredibly hot making me not so interested in heating up the oven...not to mention, apart from Lydia, we are all trying to lose a few pounds. I do have some parties coming up that will give me an excuse to take out the oven mitts and I am looking forward to it. Every time I pull something yummy out of the oven or off of the stove I get an incredible sense of satisfaction...I just want to scream at the top of my lungs "look everyone I made something delicious and without torturing a poor, innocent animal!" You can make amazing baked goods without the use of eggs, cow milk and dairy butter and I have proven it time and time again.

A couple of weeks ago we had some vegan folks staying with us from Canada and New York...they had come to join in the festivities of the very successful New Jersey Vegan Prom. This was my excuse to whip up something yummy for breakfast. I knew our guests were gonna have to hit the road early the next day so I made something they could take along with them. I pulled out my oh so trusty Joy of Vegan Baking cookbook and found a couple of things I wanted to give a go. I had purchased some blueberries from the local farmer's market so I knew blueberry muffins would be one thing I wanted to make...but Colleen's book has a yummy twist on blueberry muffins...Lemon Blueberry Muffins made with lemon extract and lemon zest...HEAVEN in a muffin I say! I also tried her Chocolate Chip Scones....which Liam gobbled up with delight....and so did I! If you haven't purchased this book yet...I highly recommend it. I think it should be in every vegans' cookbook collection.
