I swear I am not the devil.....
...actually I don't believe in the devil...(well that's a whole other story) but to keep the evil baking/cooking going I whipped these bad boys up yesterday. I had some fresh strawberries...and I couldn't just eat the strawberries...oh no....I had to turned them into a topping for some oh so decadent mini vegan cheesecakes.
I used the recipe from The Joy of Vegan Baking...I simply cut the recipe into 1/3 of what she calls for. This made enough cheesecake batter for about 6 little tart shells...then I cut the baking time to 20 minutes.
